The answer to this will depend largely on the version of QuickBooks you are using. If you are using version 2005 or ahead of time follow these instructions:
Before you attempt to open a company file to be exact stored on another computer, please ensure the following:
The folder on the computer storing the company file is set up to be shared over the network. Additional information on sharing files is available at Windows(R) Help.
Note: If the company report is on a file server, make sure your meet people administrator has given you access to this server.
The linked computer or server is map as a network drive to your own computer.
The QuickBooks Administrator has set you up as a QuickBooks user and provided you near a user name and password.
Open your company file:
From the QuickBooks File menu, choose Open Company.
From the Look surrounded by drop-down list, choose the mapped meet people drive that contains the company data file. For example, if you map your company data file to your computer’s drive E, look for Company Files Name (E:) within the drop-down list.
Note: If necessary, double-click the appropriate folders until you see the company report, which will have a .qbw extension.
Once you locate the company file, select it from the detail, and then click Open.
If prompted, enter your user name and password.

That sounds like the best way to do it. I wouldn't want my QB database on a server with read/write access. Yikes! Otherwise, I'd suggest VPNing into your server, mapping a drive to the QB folder and editing it that track.
